The Department of Food Technology organized "Sweet Alchemy – Workshop on Fruit Preservation and Value-Added Product Development" on 25th July 2026 at the Kitchen Lab. The workshop provided students with hands-on experience in fruit preservation techniques and the preparation of jams, jellies, and other value-added fruit products. Sessions also covered food safety, quality practices, packaging, and entrepreneurial opportunities in the food processing industry. The activity enhanced students’ practical skills and motivated them to explore career and business prospects in fruit processing.
As part of the workshop, students prepared a variety of value-added products such as *Gooseberry Jam, Mint Lime Jelly, Muskmelon Jam, Green Apple Jam, Dates Jam, and Pineapple Jelly etc.
The products were judged by our beloved Principal, Dr. Shaju Ouseph, and Mr. Joan John, Chef and Production Head, Department of Hotel Management. They tasted the products and gave valuable feedback on flavor, texture, quality, and packaging.
